Made by Strata Cookware, the Nitrided Carbon Clad® wok uses a patented 3-layer clad construction — a nitrided carbon steel cooking surface bonded to a responsive aluminum core. It's designed for Western-style stoves (gas, electric, induction): the shape and material thicknesses concentrate heat at the base while still transferring some up the sides, like a traditional round-bottomed wok. The balanced ratio of aluminum and carbon steel keeps it light, delivering true wok performance without a dedicated wok burner.

What is Nitriding?
Nitrided carbon steel is heat-treated with nitrogen to harden the surface — more durable, more rust-resistant, and a little less sticky out of the box than plain carbon steel. Nitriding isn't a coating; it's a transformation of the steel's surface by diffusing nitrogen into it. Like traditional carbon steel, the pan will continue to build seasoning over time and become increasingly stick-resistant with use.
